Here is another family favorite, and the perfect side dish, you would see at most of our holiday gatherings, Grandma’s Cheesy Potato Casserole. My mother has often served it at brunches with her quilting friends as well.
This is a dish to fully enjoy and savor, it has the perfect blend of flavors, even though you are only adding salt and pepper for seasonings.
How can it be okay for gluten-free?
I have added a gluten-free cream of chicken soup recipe, but there are also packaged gluten-free cream of chicken soups available now in some stores and online as well.
Mix soup, sour cream, salt, pepper, green onions and cheese in a large mixing bowl.
Add potatoes and stir to combine. Place in a greased 13″x9″ pan. Bake for 30 minutes at 350. Remove from oven and top with extra cheese, return to oven for 15 more minutes. The goal is for the mixture to be bubbly around the edges.
Optional topping: 1/4 cup butter melted, mixed with 2 cups crushed cornflakes. Sprinkle over top before baking instead of extra grated cheese. Bake 45 minutes. The mixture should be bubbly around the edges.
