Gluten Free Peanut Butter/SunButter Crispy Treats

By now I bet you’ve noticed I have a bit of a sweet tooth. It’s true…but I do try to keep my sweet tooth cravings on the “somewhat” healthier side, like these gluten-free peanut butter/SunButter crispy treats.

And sometimes I don’t…

Either way, you should try these crispy treats. This recipe doesn’t use marshmallows or butter. Any nut or seed butter can be substituted for the peanut butter; so peanut allergy folks can indulge right along with everyone else.

Gluten-free and healthy nut butter or sunflower seed butter Krispie treats

Gluten-Free Peanut Butter/SunButter Crispy Treats

1/2 cup honey or agave syrup. I use 1/4 cup of each. (agave for vegan)
3/4 cup unsweetened peanut butter. I use a natural Valencia peanut butter. SunButter is a favorite too as well as an option for nut-free diets.
1/4 cup coconut oil.
1 tsp vanilla.
3 cups gluten-free brown rice cereal. Regular crispy rice cereal is fine if gluten-free is not needed.

Line an 8″x 8″ square pan with wax paper or spray with a non-stick cooking spray.

In a large saucepan on medium heat, warm the honey or agave syrup, peanut butter, and coconut oil stirring until creamy and smooth.

Remove from heat and add vanilla. Mix well.

Stir in crispy rice cereal mixing to coat all pieces.

Pour into prepared pan and press down gently. Let sit until firm or refrigerate for faster results.

Cut into any size squares you like. Refrigerate to store. Delicious frozen too. Mmmm…so good, you will probably taste these as you mix everything together. I do!
