To Make Gluten-Free Banana Breakfast Bars, You Will Need These Ingredients:
- Lg ripe banana ~ just barely ripe for Low FODMAP diets
- Natural peanut butter ~ or any other nut butter, or use a sunflower seed butter for nut-free diets.
- Lg egg
- Pure maple syrup or honey
- Vanilla extract
- Gluten-free oat flour
- Baking powder ~ corn-free if needed
- Hemp seeds
- Semi-sweet mini or regular-size allergy-friendly chocolate chips ~ I used mini.
This recipe will make nine breakfast bars, each providing 5 grams of protein. If they last long enough, these breakfast bars freeze great in a quality freezer container.

Gluten-Free Banana Breakfast Bars
Ingredients
- 1 Lg Ripe banana ~ just barely ripe for Low FODMAP diets
- 1/4 cup Natural peanut butter ~ or any other nut butter or use a sunflower seed butter for nut-free diets.
- 1 Lg Egg
- 1/4 cup Pure maple syrup or honey
- 1/2 tsp Vanilla extract
- 1 cup Gluten-free oat flour
- 1/2 tsp Baking powder ~ corn-free if needed
- 1 tbsp Hemp seeds
- 1/3 cup Semi-sweet mini or regular-size allergy-friendly chocolate chips ~ I used mini.
Instructions
- Preheat oven to 350 F
- Line an 8-inch square pan with parchment paper.
- In a medium bowl mash banana.
- Add peanut butter and mix well.
- Add egg, pure maple syrup, and vanilla extract. Mix well.
- Stir in flour, baking powder, hemp seeds, and chocolate chips. Stir to combine all ingredients.
- Pour into prepared pan and bake for 19 minutes.
- Test with a toothpick in the center of the pan; the toothpick should come out clean except for maybe a little melted chocolate chip.
- Enjoy warm or at room temperature.
