Date With A Fig Energy Bites – Grab something healthy to snack on!

Dates and figs are “fairly new” fruits I’ve started eating and cooking with over the last few years. They are both quite healthy so that’s a great reason in itself for me to be learning more about them.

I only like my figs dried, which works out just fine since I’m a huge fan of dried fruit!  Our freezers are full of dried plums, pears, apples, peaches, figs, and cherries.

This recipe is a fun way to use dried dates, figs, and or apricots. I have also added a few handfuls of mini semi-sweet chocolate chips…chocolate and dried fruit are a delicious combination.

The combination of healthy ingredients will provide you with fiber, protein, healthy fats, and carbohydrates for the energy you need.

What about using different dried fruits?
~Yes!
Try mixing up the recipe with different dried fruits and kinds of nut butter. I had a bag of dried figs, dates, and apricots so I decided to combine all three and made a double batch.

For those that count Weight Watcher points, each ball has 3 points.

To Make A Date With A Fig Energy Bites You Will Need These Ingredients:                   
  • Old-fashioned oats, gluten-free if needed
  • Unsweetened coconut
  • Peanut butter, I used creamy natural. Substitute with any nut butter, almond or sunflower seed butter for Paleo.
  • Ground flaxseed
  • Dried figs cut into small pieces
  • Pureed dates. Apricots or figs can be substituted, or try half of each.
  • Chia seeds
  • Vanilla extract
  • Water
  • Salt

These are great served at parties in paper candy holders…makes them fancy I think.  Melted chocolate could be drizzled over the tops too.

A Date With A Fig Energy Bites

Healthy little energy balls made with dried dates and figs.

Ingredients

  • 1 cup old fashioned oats gluten-free if needed.
  • 2/3 cup unsweetened coconut
  • 1/2 cup peanut butter I used creamy natural. Substitute with any nut butter, almond or sunflower seed butter for Paleo.
  • 1/2 cup ground flaxseed
  • 1/4 cup dried figs cut in small pieces. ~ It’s a little sticky but hang in there…
  • 1/3 cup pureed dates Apricots or figs can be substituted, or try half of each fruit.
  • 1 Tbsp chia seeds
  • 1 tsp vanilla protein powder ~ I used Orgain Organic Protein
  • 1/8 cup water
  • 1 pinch of salt

Instructions

  • In a medium mixing bowl add all ingredients. A stand mixer or if you prefer stir manually. Hand mixers are not recommended.
  • Chill in the refrigerator for about 30 minutes.
  • Make into 1inch size balls. Store in an airtight container in the refrigerator for up to one week. Freeze for longer storage.
