Cassava Flour Nut Butter Cookies ~ Gluten-Free & Vegan
Cassava Flour Nut Butter Cookies are easy one-bowl gluten-free cookies that will disappear just as fast as any other favorite cookie in the house. Cassava flour is an allergy-friendly flour that measures just like any all-purpose flour without an unpleasant taste change; in fact, I would be surprised if anyone even noticed.

The differences in the nut butter consistency, variety, and brand will result in slightly different textures of cookies, but they will ALL be delicious. I have made these Cassava flour nut butter cookies with almond butter, sunflower seed butter, and peanut butter. Some are super creamy and some have a thicker consistency.
The nut butter I used in this photo was peanut butter that was less drippy at room temperature, Skippy Creamy Natural Peanut Butter. In the next photo below, I used a very drippy/creamy natural peanut butter such as Kirkland Organic Creamy Peanut Butter or Adams 100% Natural Peanut Butter. You can see the difference in the texture of the cookies.
The same would be true for nut-free sunflower seed butter cookies; some sunflower seed butter will be “drippier” than others.
Add-ins to the cookie dough is a fun way to change things up for different holidays or just for fun:

- Dandies Vegan Mini Marshmallows ~ gluten, corn, and nut-free and vegan, not soy-free. For soy-free marshmallows use Campfire Brand or Jett Puffed marshmallows but they do have gelatin and are not vegan.
- Reese’s Pieces ~ not dairy, nut, soy, or corn-free
- Reese’s Peanut Butter Baking Chips ~ not dairy, soy, nut, or corn-free
- M&M candies ~ not corn, soy, or dairy-free
- Holiday sprinkles
The marshmallows and chocolate chips are my favorite add-ins; it’s like eating a healthy s’mores cookie.

To Make Cassava Flour Nut Butter Cookies You Will Need These Ingredients:
- Nut Butter ~ I used peanut butter for the cookies in this post. Sunflower seed butter for nut-free diets.
- Unsweetened applesauce ~ regular or cinnamon
- Vanilla extract
- Sugar ~ dry type; I have not tried honey, pure maple syrup, or agave.
- Cassava Flour
- Salt
- Baking soda
- Optional add-ins listed above
**It is best and highly recommended to use the nut butter at room temperature when making these cookies.

Cassava Flour Nut Butter Cookies ~ Gluten-Free & Vegan
Ingredients
- 1 cup nut butter at room temperature ~ Substitute SunButter for nut-free
- 1/4 cup unsweetened applesauce regular or cinnamon
- 1 tsp vanilla extract
- 2/3 cup sugar ~ do not sub with liquid sweetener
- 1/4 cup plus 2 Tbsp Cassava flour ~ or other gluten-free blends
- 1/4 tsp salt
- 1 1/2 tsp baking soda
- optional add-ins ~ see in notes
Instructions
- Line a baking sheet with parchment paper or a silicone liner.
- Add all ingredients except add-ins in a medium bowl. Mix well.
- Stir in add-ins at this time.
- Form balls using 2 tbsp of dough and place them on a lined baking sheet. Push down the balls to about half the size.
- Bake for 10 minutes at 350. Let cookies rest for about 10 minutes before transferring them to a wire rack.
